    Baked ratatouille with italian-style chicken breasts.

    Contrary to my usual approach I did not do much alteration to the recipe (https://heygrillhey.com/grilled-ratatouille/) except take it inside (out of the heavy rain we're getting in coastal NJ) to bake, rather than grill. The recipe is precise as to temp and time, which makes me think that the grilled version was taken from a previous baked version, so this is full circle, LOL.

    Family liked the veg very much. This was new to me, I typically envision ratatouille as a brown eggplant mishmash.

    The chicken is a simple herb-garlic-parmesan bake/broil prep.

    Tonight we just drizzled a little balsamic vinegar on the lettuces. Pomegranate molasses works equally well. But better yet is a blue cheese sauce (puree blue cheese and yoghurt together) or buttermilk ranch. We grill the salads on a cast iron griddle pan cut side down indoors but this could be done on an outdoor BBQ. A good way to serve some food early in the evening (because it is ready so quickly) while you wait for meat to be done when you are grilling outdoors for a crowd.

    Frozen food meal. Roast Mediterranean veg done in the air fryer. Ditto frozen wedges. Frozen floured bassa fillets cooked a la meunière on the stove.

    Haven’t posted anything since I’ve been having stuff I’ve frozen just with fresh salads. Nothing new just been too tired and sore to cook new food reason for my cooking for 4 people when it’s just me. I save for when my back is sore. 190oggvg0k94.jpeg
