    Two homemade breakfast burritos (three eggs, 1/4 c. shredded fiesta cheese, 1 c. baby spinach and kale, two slices low-sodium bacon and two Ole high-fiber low carb wraps) a Fuji apple and an Apple Bing energy drink (30 cal). Technically it was more lunch than breakfast, but in my opinion breakfast food is an all-day thing, lol.

    Sunday breakfast so I had a 2-egg omelet with bacon, feta, onions, mushrooms, and asparagus, with some leftover cauliflower on the side plus some plain, 0% greek yogurt mixed with this onion dip spice mix for fun. I was going to do guac but decided to save that and do the yogurt instead.

    I didn’t have any tortilla chips, so crisped up a couple of corn tortillas in the air fryer, broke them up and tossed them in a baking dish with about half a jar of enchilada sauce and topped with cheese. Put them back in the air fryer for a few minutes to get melty and breakfast is ready! Topped it with a fried egg and I was all set.
