    I don't have a picture of this but I made this about a month ago and having it tomorrow night. It's amazing! I love it. And it's good just the way it is or I've tried it over some rice. Both ways very yummy! Hope you enjoy!

    Mexican Chicken Crock Pot Chowder

    Ingredients
    1 can Cream of Chicken soup
    1 can of yellow corn
    1lb boneless, skinless chicken breast
    1 can 4oz Fritos Jalapeno & Cheddar Cheese dip
    1 can fat-free chicken broth
    1/2 cup canned green chilies
    1c light sour cream



    Directions
    Combine corn, cream of chicken, chicken broth, green chilies w/juice into crock-pot on low heat.

    Add a pck of chopped chicken to crock-pot and cook for 3-4hrs.

    After 3-4hrs, in a sepparate bowl, mix 1C of the crock-pot mix with the sour cream and cheese dip and mix well.

    Add the mixture to the crock-pot and cook for an additional 10-15mins.

    Number of Servings: 9

    This one is good from BHG.com. I used boneless chicken breasts and left out the bacon. Great served with refried beans or black beans.

    Makes: 6 servings
    Slow Cook: 5 to 6 hours (low) or 2 1/2 to 3 hours (high) plus 15 minutes (high)
    ingredients

    6 bone-in chicken breast halves, skinned
    1 tablespoon chili powder
    1/8 teaspoon salt
    1/2 cup reduced-sodium chicken broth
    2 tablespoons lemon juice
    1/3 cup sliced pickled jalapeño chile pepper, drained
    1 tablespoon cornstarch
    1 tablespoon cold water
    1 8-ounce package reduced-fat cream cheese, softened and cut into cubes
    2 slices regular bacon or turkey bacon, crisp-cooked, drained, and crumbled (optional)
    directions

    1. Sprinkle chicken with chili powder and salt. Arrange chicken, bone sides down, in a 4 1/2- to 6-quart slow cooker. Pour broth and lemon juice around chicken. Top with drained jalapeño pepper.

    2. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours.

    3. Transfer chicken and jalapeño pepper to a serving platter, reserving cooking liquid. Cover chicken and keep warm.

    4. If using low-heat setting, turn to high-heat setting. For sauce, in a small bowl, combine cornstarch and the water; stir into cooking liquid. Add cream cheese, whisking until combined. Cover and cook about 15 minutes more or until thickened. Serve chicken with sauce. If desired, sprinkle with bacon.

    I have made this a few times i use less cheese tho and per serving is ong about 300 cals and its very tasty

    Bump. I love that some of these only feed two. My DH just got out of the hospital with orders to lose weight and exercise. As we are about to become empty nesters I have been trying to find simple healthy ideas for two. Thanks.

    Chicken Stroganoff

    1 lb frozen boneless, skinless chicken breast
    1 can 98 % fat free cream of mushroom soup
    16 oz. fat free sour cream
    1 package onion soup mix

    Place frozen breasts in bottom of crockpot. Mix other ingredients and pour over chicken. Cook on low for 7 hours.

    It is delicious and super easy!

    It is a little high on the sodium so make sure you get your water in that day. It is great over noodles, rice, etc.

    To cut down on sodium don't put the onion soup mix in.....just season it yourself w/dried onion, garlic, pepper...etc.

    Here's one I just did last week:

    2 pieces of chicken (leg & thigh, skin on & bone in). You could use chicken breasts if you want - DH likes dark meat better.
    1 can Aldi's pineapple chunks
    2 tablespoons brown sugar (and honestly I could have skipped these)
    1 big sweet potato, cut into pieces (big chunks.)

    Good things about this recipe: Super easy, the chicken was amazingly tender, the whole thing fed 2 people (generously!) for ~350 cals.

    Bad thing: the sugar from the pineapple - or even the brown sugar - burned to the side of the crock pot. It was a bit of a challenge to clean up. :)

    Crock pot liners are the best invention every...I never have to scrub my crockpot!
