@amandaeve We have a lot of similar tastes in food, apparently. Never thought to mix eggs and tempeh. I guess you dip some of the tempeh in the soft yolk?! I'm intrigued at the yummy potential!! Also, I'm now going to make a spring roll for lunch. Thx for the inspo!1

Tomato, lentil and onion soup. Chicken caesar from last night's leftover roast chicken. I made an aqua faba meringue disk for pavlova but we are too full to have that.

Hmmmm....I hate to admit it (though not sure why) but Morning Star Farms are my favorite. The photo is a kosher meat dog. It is not my favorite meat dog (I prefer the plump and juicy kind), but the family prefers the skinny kosher model.0 -

The plan was to mix the tempeh in with the stir-fry, but this was a very bitter variety so I ended up steaming it separately. And, yes, dip it in the yolk I did!1 -

Day 2 of managing leftovers from Friday's roast chicken. Avglemono soup and greek salad. Dinner was pretty light so we might get hungry later. I made an aquafaba meringue disk yesterday for pavlova that we didn't eat. Might use that for Eton mess if we get hungry later tonight.

Made apple cake in cupcake and mini cupcake size. Gave out to neighbors (large ones) . Weird baking in face mask and gloves. But got to keep everyone safe.

Got motivated by all the bread pics to try something different: Blueberry Banana Bread
But because I'm half-Jamaican, recipes are mere suggestions. Therefore, my version kinda follows the link above EXCEPT...
* 4 bananas instead of 3
* substituted all the white sugar for brown sugar
* reduced sour cream by half
* substituted last 0.5 cups of enriched flour for buckwheat flour
* added 0.25 cups more blueberries (for the topping)
* added 2 tbsp of chopped walnuts (for the topping)
It's SO moist and perfect with coffee since it's not too sweet.
However, be warned, it's all fun and games until you figure out the calories. My adapted version yields 18 servings [178 calories: 28g carbs, 6.8g fat, 2.4g protein]. Still worth it!
If I were to do it again - and I will - I'd add some additional fiber to make the carb hit worth it (ex. like this one from North Coast Naturals)

The very last of the leftover roast chicken from Friday night. Last bit got turned into coronation chicken to have on a sandwich at lunchtime. Now I just need to deal with carcass in the freezer saved for stock making.
