Not a meal, but I have been saving all my asparagus and artichoke trimmings in a bag in the freezer. Making vegetable broth with that at the moment. Going to try a tip from the internet and puree the veg stock in the food processor and then strain before freezing.3

Mmmk, so it was less of a meal than a snack and it was the least amount of cooking possible. Also, it was from what I ate/cooked yesterday.
May I introduce to you, my invention (patent pending): bacon-wrapped nori snacks [cue angelic music...]
The texture of the one strip of bacon (well, in my case chicken bacon) against the crunchy saltiness of the layered seaweed snacks was magnificent. Try it, please. The end.

Risotto w arborio rice, EVOO, low fat cream, black pepper, white wine, veg broth, small shrimp, clams, chopped tomato, and Parmigiano Reggiano.

Just finished dinner: "Mexican Chicken in Crockpot". Similar to a chili. Chicken nuggets, black beans, salsa, corn, and topped with a little grated cheese. So good and plenty leftover for another meal.2

Breakfast today. Grilled a Portobello mushroom which had been sprayed with cooking spray and sprinkled with salt free steak spice. When it was nearly done I cracked an egg into the under side and grilled it again until the egg was cooked, then sprinkled a little grated cheese on top and left it in the oven for a couple of minutes for the cheese to melt. Yummy!5

Last night was all done on the grill. Grilled eggplant and zucchini brushed with Olive Oil and a little sea salt and ground black pepper, a couple of sliced or a nice Tuscan style bread done the same way and grilled Italian sweet sausage. Quite lovely together with a nice red wine.8

Meatless last evening, with a Southwestern baked brown rice and black beans casserole onto which a couple of over-easy eggs got added, a la "huevos rancheros." Don't have pics of the final products, but here's the rice and beans and veg mix ready to be covered and baked. Casserole is for 3 persons for two nights. Tonight, will probably have some sort of TBD chicken dish to accompany the leftover rice and beans.

Pasta and meatball oven dump. I left out the cheese and my family added cheese on their own plates. It takes 5 mins to prep. 40 to bake. And done. So easy. I love easy. Oh and we had it with frozen corn.... well cooked frozen corn.1
