    Pasta Scarpariello (a southern Italy, Naples area, specialty). Big tubular pasta, tomatoes (I used canned San Marzano), fresh basil, EVOO, garlic, red pepper flakes, smoked cheese and Parmigiano Reggiano.rez8hhged6v5.jpg

    The cheese is creamy, and it's in there. I didn't want to exaggerate.

    Went out on a limb and made Drunken Noodles and Mango Sticky Rice for desert. All from scratch. Turned out well but a bit too heavy on the Thai Chilis and Fish Sauce (just a tad salty). First time making either.

    Air fried sweet potato fries. Just bought an air fryer and wow, shorter cook time and crispy!

    Mashed chickpeas with lemon Tahini dressing and salad in a coconut wrap and four dozen oatmeal chocolate chips cookies - some are going up to my mother with her gift tomorrow.

    Found a recipe with cloves! Of course, there were subs and omissions...

    - no carrots
    - 50% more of all the other veg
    - molasses instead of brown sugar (same ratio)
    - ACV instead of red wine vinegar
    - 23 oz of tomato sauce*
    * 4 tbsp of a cornstarch slurry
    * 1 can of tomato paste

    * (Umm, just use the prescribed amount of tomato sauce lol)

    But the cloves were a gamechanger for me. Am I the last to know?

    French toast with cinnamon raisin bread.

    The recipe says two pieces of toast, but there was enough for three using Pepperidge Farm Cinnamon Raisin Swirl Bread.

    I really need to improve my cooking skills. :/

    After a couple of months of stay-home lockdown, and spotty resupply (and delivery issues), it is easy - and refreshing - to enjoy the simple pleasures of grilled fresh chicken. Making pantry stores varied, palatable, nutritious and meet our healthy meal plan goals is a chore, day after day.

    Served with side veggies.

    Late morning oats and omelette with seeds and trying two new recipes for dinner: chickpea bowls with lemony yogurt and grains in herby buttermilk. Fingers crossed! (We have pizza in the freezer if it doesn’t work out 😂)

I think this will be a great ingredient in desserts such as coffee pavlova (meringue, ice cream or whipped cream and the dalgona mixture). Thinking about how to use this in other desserts containing coffee such as tiramisu. Might be usable as a low fat frosting for cupcakes.

    The recipe I was given was 2 tablespoons each of instant coffee, sugar, and hot water. I used instant espresso powder and half the recommended sugar which made it taste too agressively of coffee. Use an electric whisk to make a foam.

    Jamaican food is my weakness! I haven’t had since quarantine! As soon as things go back to normal I am getting Jamaican from the place near my work!

    A cup of shrimp, a cup of zoodles, lots of fresh garlic mixed with a sun-dried tomato and herb seasoning blend, then sprinkled with nutritional yeast. A slice of Ezekiel bread on the side.
