Chicken Stroganoff
1 lb frozen boneless, skinless chicken breast
1 can 98 % fat free cream of mushroom soup
16 oz. fat free sour cream
1 package onion soup mix
Place frozen breasts in bottom of crockpot. Mix other ingredients and pour over chicken. Cook on low for 7 hours.
It is delicious and super easy!
My hubby inhaled this dish tonight. And it was extremely good. Ok, so like I inhaled it too! And it's only 4 WW points per serving.
The recipe below is from Prevention Magazine's Slow Cooker Recipe Book. This serves 4, but they are super generous portions! I use fat free sour cream and we stir it into the dish. Really makes it creamy!
MEXICAN PORK & BEANS
2 tsp. olive oil
1 lb. pork tenderloin, fat trimmed and cut into 1/2" cubes
2 ribs celery, sliced
1 large green pepper, sliced
1 onion, chopped
2 15 oz. cans kidney beans, rinsed and drained
2 14.5 oz cans no-salt-added diced tomatoes
1 cup frozen or canned corn (drained)
2 tbsp. chili powder
2 1/2 tsp cumin
Sour cream and cilantro (optional)
Heat oil in skillet over medium heat. Add pork, celery, bell pepper and all but 2 to 3 tablespoons of the onion. Cook until meat is no longer pink.
Transfer mixture to crock pot. Add beans, tomatoes, corn, chili powder and cumin. Cover and cook on low for 4-6 hours. Season with salt and ground black pepper to taste and top with reserved onion.
Serve with a dollop of sour cream and cilantro (not added in the nutritional content).

Pulled Pork
Ingredients
1.5 cups chopped onions
2.25 tsps chili powder
2.25 lbs lean pork tenderloin
1.5 cups barbecue sauce
Directions
Combine onions, chili powder, barbecue sauce and pork in crock pot. Cook on low for 6-8 hours or high for 3-4 hours. Shred with two forks. Each serving is a 1/2 cup.
Optional: Serve in whole wheat hamburger bun (not included in calorie count).

I made this today. So yummy. Got this from Taste of Home Healthy Cooking magazine.
CORN AND BROCCOLI IN CHEESE SAUCE
1 16 oz package frozen corn, thawed
1 16 oz. package frozen broccoli florets, thawed
4 oz. reduced-fat process cheese (Velveeta), cubed
1/2 cup shredded cheddar cheese
1 10 1/4 oz can reduced-fat, reduced-sodium condensed cream of chicken soup, undiluted
1/4 cup fat free milk
Combine the corn, broccoli and cheeses in crock pot.
In a small bowl, combine the soup and milk and pour over vegetable mixture.
Cover and cook on low for 3-4 hours. Stir before serving.

Black Bean Crock-pot Soup
Dry black beans are simmered without presoaking in the crock pot, along with vegetables, vegetable broth, green chilies, and seasonings of garlic, cumin and thyme.
Servings: 6
Ingredients:
1 Tbsp Olive Oil
1 Yellow Onion
1 Green Bell Pepper
7 cloves Garlic
1 lb Dry Black Beans
6 cups Water
2 cup Vegetable Broth
1× 7-oz can Diced Green Chilies
1 Tbsp Ground Cumin
1 tsp Thyme
½ tsp Salt
½ tsp Pepper
2 Bay Leaves
For Garnish:
⅓ cup (non-dairy, soy) sour cream
½ Red Bell Pepper, diced
½ White Onion, diced
3 Tbsp Finely Chopped Fresh Cilantro
Directions:
Add olive oil to the crock pot and turn on highest setting. Chop yellow onion and stir into the olive oil. Cover and let cook while you chop the green bell pepper into 1-inch chunks. Stir in green bell pepper. Using a garlic press, crush garlic cloves directly into the crock pot. Stir and cover.
Rinse black beans in a colander. Add to crock pot along with water, broth, chilies, cumin, thyme, salt, pepper, and bay leaves. Cover and cook on high at least 8 hours.
Before serving, partially puree soup with a hand mixer or submersible hand-held blender. Mix until thick, but still with chunks of beans, onions and peppers visible. Ladle into 6 soup bowls. Top each bowl of soup with a dollop of sour cream, some diced red bell pepper, diced white onion, and a sprinkling of cilantro.
Helpful Tips:
On a chilly, autumn day, nothing warms the house like the smell of the crock pot simmering all day long! This recipe is particularly easy, because you can use dry beans without soaking them (and it has the added bonus of no added salt from canned beans.) Using vegetable broth and no added meat, makes this black bean soup a no-cholesterol, low-fat comfort food.
