Saturday night dinner: birthday party picnic fare - small cheddar cheeseburger with avocado on a ciabatta dinner roll, side salad of romaine, red leaf lettuce, radishes, jicama, cucumbers and mozzarella cheese with a drizzle of Catalina dressing and a wedge of watermelon

Sunday breakfast: Keto Blueberry Pancakes made with a Birch Benders mix (a few blueberries in the pancakes and more on top) with a drizzle of pure maple syrup

Out with the girls for dim sum in Chinatown.

Stir fried baby broccoli and ground turkey with rice. There's some sweet chili sauce in there, plus a fried egg to add some richness to the turkey. And quick pickled red onion.

Salade Lyonnaise (=frisee aux lardons) but I used romaine, tomato and blanched green beans instead of the curly endive. Linguine with brown butter, sage and mushrooms afterwards refuses to upload.

Four cheese ravioli with homemade creamy walnut pesto sauce and a side of sautéed garlic parmesan green beans

Salmon and veg4 -
Not feeling 100% today so went with my personal ‘comfort’ food. Brown Rice with various veg (leeks, edamame, broad beans, red pepper & sweetcorn), cumin, coriander and lots (and I mean LOTS!) of Lemon Pepper. Been my comfort food since my early 20s, any veg will do, the only ‘must have’ are the leeks. Huge bowl of comfort for just around the 500 calorie mark. Perfect! 💜

Brunch: breakfast sausage, fried eggs cooked in sausage grease, leftover fried green tomatoes. Sausage came from a local butcher.
Dinner: Chopped salad w/avocado ranch (kit), campari tomatoes, kalamata olives, cottage cheese with Trader Joes Umami seasoning blend. The TJ Umami is mostly powdered mushroom powder which makes the current brand of cottage cheese taste better. I only like one brand (Nancy's) but I can't get it where I currently live.

Beetroot Dhal, Runner Beans, homemade Skyr, homemade Amba Sauce and Iceberg Lettuce.
And no, I don’t know why the Iceberg is there, either…seemed like an idea when I looked in the fridge but afterwards I wondered what I’d been thinking! It actually worked perfectly well, though! 🤷♀️

Monday dinner: 4 cheese ravioli with a little red lentil/quinoa pasta, baby peas and walnut basil pesto. Side of garlic and parmesan green beans.

Chicken tacos and Mexican Caesar salad (kit). The Mexican version adds sunflower seeds and some spice to the dressing but is otherwise the same as a normal Caesar salad. Tacos: tortillas from the freezer (purchased from the tortilla place), chicken cooked in a basic salsa, avocado, cilantro, queso fresco, freshly squeezed lime juice, pickled red onions, salsa and sour cream. (Last two items added after I took the photo). These are the best tortillas I've ever had even frozen. They hold the fillings well even when overstuffed. We make them one taco at a time to keep them warm.

Monday dinner:
Crusted pork tenderloin, parmesan and garlic roasted new potatoes, roasted carrots and a sourdough dinner roll.

Grass fed beef patty, mashed white potatoes (skin on), corn on the cob. The beef was a freebie from the butcher to entice us to come in and the patties were already formed with some kind of black spice on them. We couldn't figure out what it was even though we could taste something there.

Homemade corned beef cooked sous vide and pulled out of the freezer. Roast potatoes parboiled in salt beef broth and finished in the air fryer. Carrots and green beans cooked in the salt beef broth. Pickles.

Green Harissa Roasted Vegetables (red onion, baby courgettes, cherry tomatoes, red & green peppers, chickpeas) with a herb & tomato couscous.

Wednesday dinner:
Leftover pork tenderloin and garlic parmesan roasted potatoes with a side of baby peas and a few strawberries from my garden

Went to a Vietnamese cafe.

I sprouted my own mung beans! I stir fried them, cooked the baby brocc in crispy garlic chili oil. The soy egg and pickled onions are both home made too. Had it all with a cup of rice, ended up being just under 600 calories.

A day in the life...
Breakfast: workout protein malt/shake. (Didn't take a pic)
Snack: fresh sourdough with camembert cheese broiled until melty, one half with granulated garlic and Italian seasoning, the other half with strawberry rhubarb fruit spread
Lunch: a chicken-loaded baked potato (with Greek yogurt, shredded cheddar, and cholula)
Supper: sirloin steak with onions and portabella mushrooms, side was steamed carrots tossed with butter and dill
Dessert: homemade vanilla ice cream with strawberries and dark chocolate

This is all plant based!
Good Catch " Fish- Free tuna". JUST Egg plant based, Ezekiel bread, plant based queso, herbs, nutritionl yeast. It was so good!

Friday brunch: Keto Blueberry pancakes (I froze some the other day; they cracked when I separated them to put them in the toaster) and a 1/3 cup of homegrown strawberries with a drizzle of pure maple syrup

Friday dinner: One large pecan crusted chicken tender, twice baked new potatoes (2 white. 1 purple, baked with a drizzle of olive oil, salt and pepper) and a side of steamed broccoli

We went out for Mexican food. Flautas (one each: chicken, pork, beef), rice, refried beans, "salad" and negra modelo beer. I only ate half the meal. Way too much food.
