Dinner of leftovers from last night's fish taco's. Everything from last night warmed up the microwave (except the quick pickled cabbage) and augmented with some store bought guac and cherry tomato salad.

I seem to be the only person posting here. Friday night was a very quick meal which involved 12 minutes of cooking. Lamb shank was sous vide a couple of weeks ago and tossed into the freezer. Defrosted and browned in the air fryer at 200C for 10 minutes. Discovered a quick way to do great mash, but it requires a potato ricer. Prick a large baking potato for each person with a fork in several places to prevent explosions in the microwave and zap about 8 minutes until potatoes are soft. Cut hot potato in half and put cut side down in the ricer and squeeze. Discard each flattened potato skin as you go. Stir in milk, butter and salt to achieve desired texture/taste. Carrots were microwaved at the same time and finished in a sautee pan with a knob of butter and a drizzle of molasses. Frozen green beans were sauteed in another pan. We had some lamb gravy in the freezer.

Salad I made the other day for work lunch: beef short rib salad w homemade jalapeño ranch dressing. So good!7 -
Breakfast for dinner. The toast has my homemade rhubarb jam on it. I e got a bunch more rhubarb in the freezer which came out of my CSA box. Summer is finally here in the upper Midwest!6 -

Lunch at a tapas bar. We shared an order of crullers for dessert but were so excited we forgot to photograph that.

Left lunch at home so bought lunch at work: a chicken alfredo garlic bread sandwich. Insane but delicious.5 -
1/4 Cup Fage 5% Greek Yogurt, 2 oz. Raspberries, 4 Almonds, 1/4 tsp Vanilla.

A light dinner after the late tapas bar lunch. Some homemade dumplings I had in the freezer (I make these when I have a little leftover meat) followed by Turkish salad of watermelon, feta, olives, mint and pomegranate molasses.

French buckwheat galette with smoked duck breast, a drizzle of honey, grilled almond slices and a green salad.

A very quick weeknight meal. Meatballs pulled out of the freezer and warmed up, roast cherry tomatoes (prick each with a fork to prevent bursting causing them to stew instead of roast), sauteed spinach and my new favourite way to make great mash in 10 minutes. Prick potatoes with a fork to prevent explosions and microwave about 8 minutes until soft. Cut the hot potatoes in half and put into a potato ricer cut side down. Press out and scrape off the peels with a fork as you go. Stir in milk, butter, and salt to taste. If you added a lot of cold milk, warm up the mash in the microwave for a minute.

Collection of healthy eating that I started this month! Oatmeal, pancakes, coleslaw, chicken patties, and buddha bowls.

A girlfriend and ex colleague came over for dinner and I did classic Sunday roast of spatchcock chicken, carrots caramelized with molasses and butter, sauteed frozen green beans and my favourite easy mash of microwaved potatoes pushed through the potato ricer which serves to peel the potatoes. Dessert of pavlova using no fat yoghurt instead of whipped cream which I thinks is actually better than the traditional recipe as the tartness of the yoghurt offsets the meringue.

Still heatwave food: leftover of yesterday’s bbq’ed veggies (zucchini, eggplant and mushrooms) with wholewheat pasta and the rest of the feta cheese.

It's too hot to eat or cook. Leftover roast chicken in a kinda/sorta chicken caesar but with ranch we had in the fridge instead of caesar dressing.

Crispy-skin salmon, riced cauliflower, and tomato-cucumber salad. The seasonings hint toward Asian, with sesame, soy sauce, garlic, ginger, and cilantro. It’s very fresh and light! 463 calories, 42 g protein, 16 g carbs (7 g fiber).

Three Bean Salad for lunch. Will be better once it’s had time to chill down properly but still tasty and refreshing!

Poached Eggs with Harissa Chickpeas & Garlic Yoghurt. Much more filling than I thought. Would have been better with just the one egg.

A girlfriend came over and we batchcooked a huge amount of meat loaf and gratin dauphinoise. `Not the best choice to cook something in the oven during a heatwave. As we had the oven on anyway, roasted some cherry tomatoes. Some rucola salad with that. There was a lot of grated carrot in the meatloaf.

Boiled artichokes followed by spaghetti aglio olio made with diced shiso leaf instead of parsley because that's what we had leftover from making onigiri on Sunday.

Made Falafel today in a silicon Waffle mould. Air fried rather than fried or baked. Here I used them in a bowl with very low calorie coleslaw and a bunch of Greek salad style stuff plus a garlic yoghurt sauce and an oil free Zhoug sauce. It’s a winner! Extra surface area from the waffle shape makes the falafel easier to get the crispy outer with the tender middle that makes falafel great!
