Dinner last night. I’m currently getting tested for celiac disease so trying to finish up anything at home w gluten just in case. I don’t like having to throw away food.

This dinner was incredibly easy to put together on the weeknight if you have salt beef in the freezer. I make it sous vide in industrial quantities and freeze small portions. Sweet potato was cooked skin and all in the microwave while I made a salad of celery, apple, toasted pecan and capers. Halved sweet potato was pressed cut side down in the potato ricer, removing the spent skins. Afterwards, the sweet potato mash and sliced salt beef were warmed up in the microwave.

The hubby likes to eat out on Friday night because it makes the weekend feel longer. Dinner at the local Thai.

We had a no show at last night's dinner party so his portion of duck confit went into a salad today. Added store bought croutons, raisins soaked in tea, and candied pecans.

I made a meze "plate" to share among a couple dozen people who were camping during a two-day whitewater paddling trip. It was part of the annual potluck that returned this year after a few year hiatus. We didn't meet during COVID - no travel. Then last year our reservations got the kibosh because of wildfires. It was good to get back up there, and everyone loved the meze.

The only thing that surprised me was how fast the anchovies disappeared. Mmmm. There were veggies and humus left over for my lunch the next day.
