    CROCK-POT APPLE BUTTER (prep time 10 minutes) this fills your home with a wonderful scent

    Ingredients:
    2- 3 lb (50 oz) jars unsweetened apple sauce
    3 lbs granny smith apples
    4 cups sugar
    1 1/2 cups apple juice
    2 tsp cinnamon
    1 tsp cloves
    1 tsp allspice

    Instructions

    0.Peel and cut apples into small chips. Place all ingredients in the crock pot and stir.
    1.Cover and cook on low overnight (eight to ten hours). Remove cover, stir and taste. Add more spices or sugar if desired.
    2.Continue cooking for a few more hours, uncovered, until some of the liquid has gone and butter has cooked down a bit.
    3.Pour into jars and refrigerate (unless it is canned properly).
    4.Serve over hot biscuits, toast, scones, or just eat it out of the jar if no one is looking!

    I have a bok choy soup recipe that I have changed some. My kids call it "Yummy good for you soup"

    1 leek, diced
    sauted in 1 tsp butter (I have been known to skip this step and just add the chopped leak and a touch of EVOO to the crockpot)
    add a clove of garlic (I always at least double the garlic because my familiy loves it!)
    4 baby bok choy sliced
    8 cups vegetable broth (I use 8 cups of water and vegetable bouillon to make the broth)
    1 tsp marjoram
    2 potatoes diced
    2 carrots grated
    Vermicelli 3 oz. (I tend to omit this because it nearly doubles the calories)

    our family favorite. It even gets my husband to eat vegetables. I have read that yellow onion can be substituted for the leeks. (this makes the recipe cheaper and leeks aren't always easily available.)

    I have filled my crock with potatoes and left them all day. The weight of the ones on top can cause the ones on teh bottom to split open, but if you are going to split them anyway...doesn't matter! ;-)

    Crock Pot Cream Cheese and Sausage Dip
    Great for New Years Parties!

    1/2 pound fresh, ground pork sausage (brown before putting in crock pot)
    1 (8 ounce) package cream cheese
    1 (14.5 ounce) can diced tomatoes with green chile peppers

    Serve warm with tortilla chips

    Italian Beef

    2-3 lbs pot roast
    1 jar sliced pepperoncini
    6 cloves garlic
    enough beef broth/water to almost cover

    Trim beef of visible fat...cut slits in meat and insert garlic cloves, whole. Pour peppers w/their liquid and the broth/water and cook on low 8-10 hours.
    Drain liquid (save some for dipping if desired as an au jus) shred the meat, serve with ciabatta rolls and provolone melted under the broiler with a little horseradish sauce.

    For my New Years party I am making Buffalo Chicken Dip in the slow cooker... OMG if you love wings, you will LOVE LOVE LOVE this!

    Boil chicken, drain and shred (Franks Red Hot site suggest using can chicken)
    Add to slow cooker
    Add 1 package cream cheese
    Add 1/2 cup (1/4 cup for less intense, 1 cup for more punch) Franks Red Hot Wing Sauce
    1 packet of dry Ranch seasoning (I use this for more flavor)
    1/2 cup of Ranch or Blue Cheese dressing

    Cook on low for 2-3 hours
    Before serving sprinkle with mozzarella cheese

    Serve with tortilla chips, bread, celery.. etc

    BBQ pulled chicken

    3 pounds boneless skinless chicken breast
    1 bottle mesquite bbq sauce
    1/2 cup zesty italian dressing
    1/4 cup brown sugar
    2 Tblsp worcestershire sauce

    PLace chicken in pot. mix all other ingredients and pour over chicken
    cook on low for 6-8 hrs. Remove chicken and shred with forks. Serve with rolls, on salad or alone

    Makes 12 3 oz servings.
