i don't use cheese in the crust. and use cheddar cheese on the pizza.

Do you substitute anything for the cheese? I've never tried the cauliflower crust because it uses so much cheese, but it looks like it's necessary to bind everything.

I make my pizza crust without the cheese. It binds just fine if you make the crust thin enough.

I made it tonight! It was delicious, although my mix came out a bit too sloppy so the base didn't secure together the best. I used buffalo mozzarella, peppers, olives and onions as my topping with a puttanesca sauce. It came out at 413 calories for the whole thing so I'm happy

You could use egg substitute--no cholesterol and way fewer calories.

I made this pizza and my son took off all of the toppings and just ate the crust. He looked at me while doing it, just "daring" me to say something to him about it, but I just smiled because he had no idea he was eating a whole bunch of cauliflour. haha!

He must be wondering how his mom is letting him eat the crust! lol
I will try finding the egg substitute and make this on the weekend. Hopefully it will turn out good :)

Bump for later! My grandmother has cauliflower in her garden this year and it's in such abundance that I must do something with it, and this looks a lot better than steaming them.
