    Just made this again tonight. This recipe just never gets old and its so damn good for you!

    Ok I made this tonight and altered the recipe. I used 90/10 ground beef, 2% velvetta, fat free milk, and loaded up the fresh onions and peppers and added a can of rotel tomatos. This is 6 servings

    948 Sodium

    Negative on the Velveeta. Just the mere thought of it makes me want to heave! But I'd totally health-ify this. I LOOOOOOOOOOVE Cheese (real cheese).

    As a matter of fact, I'm going to make a healthy version of this for diner next week.

    I am going to try this tonight but i will be modifying it just a bit. I think I am going to use ground pork, left over queso dip i made, toss in mushrooms, several types of peppers, some garlic, and maybe a little reslish. I may even sneak in a little mustard. I think I am going to add panko to the top after i add a little cheese there too. I also plan to crock pot mine. oh so easy to do.
