I think corn chowder is in the plans for next week. I have a bunch of corn kernels (and the cobs they came from) in the freezer waiting.2 -
Grilled ribeye, red peppers, and pineapple along with oven-roasted broccoli for my dad's birthday dinner yesterday. For dessert we made brownie sundaes yum!!4

Jimmy Dean delight sausage/egg biscuit + bacon. I put it in the microwave, that counts.

Pork loin with apples and cranberries in the slow cooker. Serving with green beans and a roasted root vegetable mash.2

I made 110 gnocchi, not all of which are on that sheet pan. The vast majority got frozen, but I ate a handful this evening with the sauce from a few days ago. The dough was stickier than usual (I make gnocchi a few times a year) but they cooked up well.5 -
Chicken noodle casserole. Adapted from the skinnytaste tuna noodle casserole recipe. I made shredded chicken in the instant pot. I also added garlic and used shiitake mushrooms because that’s what I had on hand.

BBQ Sauerkraut Casserole
Ingredients:
(Please note, I pared these amounts down to make fewer servings as I am cooking for one. My other changes are [bracketed].)
1 1/2 lbs ground beef
[93% Lean]
1 27 oz can sauerkraut drained
1 small onion chopped
2 cups tomato juice
[V8 Low Sodium Vegetable Juice]
1 cup brown sugar
[Sukrin Gold, a substitute I found on Amazon]
[Fordhook Lima Beans, I wanted another vegetable]
Salt, pepper to taste
[Other seasonings could work but I didn't try any]
In large skillet in oil of your choice, brown beef and onion. My beans were frozen so I put them in also. Drain, if needed.
Spread that mixture on bottom of large baking dish. Lay the sauerkraut over the beef, enough to cover then pour juice over that. Finish by sprinkling sugar substitute over juice and sauerkraut. Bake in 350° oven for 60 minutes

Vietnamese lamb chops on rice vermicelli with asian cucumber and tomato salad. Some dipping sauces and pickles on the side.

Baked pork tenderloin, boiled beets, sauteed lemon brussels sprouts w/ homemade sugar free apple sauce.2 -

Homemade chicken sausage with roasted garlic and thyme. That was eaten with polenta, blistered cherry tomatoes, and walnut bread from my favorite bakery.
I also made breakfast sausage with maple syrup, dried cranberries, smoked paprika, and a tiny bit of nutmeg (along with salt and pepper).5 -
Great Blackbean burger purchased at Costco..amazing. 22 carbs but 10 fiber..then a mixed green salad with feta and blueberries..amazing beautiful meal

Chinese. Rice, chicken and snow pea stir fry with soy and oyster sauce and a side of sweet and sour potato, carrot and celery stir fry.

I cooked at a girlfriend's who has a new baby. My easy three course Italian inspired dinner is about 35 minutes cooking time in total.
Starter of cheat's soupe au pistou. A bag of frozen veg, a few chopped fresh tomatoes, water, a couple of stock cubes. Stir in a big dollop of commercial pesto into each bowl of soup to flavour the broth. About 10 minutes work.
Main of spaghetti carbonara where the sauce is made in the 10 minutes it takes to boil the pasta.

Carbonara generates leftover egg whites so I make dutch bitterkoekjes (=almond macaroons) to dip into amaretto for dessert. In the food processor blitz 2 egg whites with 150 g of almonds, and 150 g of sugar and 2 teaspoons of bitter almond exract in the food processor. Spoon onto silicon paper lined baking sheets and bake 10 minutes at 190C.2 -
Not a meal, but I made pita using the recipe from Peter Reinhart's book Crust and Crumb. They turned out really well, 7 out of 8 poofedand they taste good.

Cabbage Bacon Kielbasa Stir Fry
4 slices crispy cooked bacon
[Equals about 2 tablespoons which I took from supermarket salad bar]
1 teaspoon sesame oil
[I have Japanese]
1 lb. kielbasa sausage
[I used a Lite variety and 14 oz, I don't think 1 lb packages are sold]
1 tablespoon canola oil
[I used olive oil which is what I had]
1 large sweet onion cut in half and then cut in thin crescents
1 red bell pepper julienned
1 head green cabbage cut in thin shreds
[1 bag cole slaw mix. I try to minimize actual work in kitchen. It works in a lot of recipes and the julienned carrots add color a gives you an extra veggie]
2 cloves minced garlic
[1 teaspoon jarred pre minced]
Salt & pepper to taste
Instructions
Before starting cook bacon in oven or sauté pan. Place on paper towels and set aside.
{Ignore this step if you raid salad bar as I did}
Add sesame oil to wok and heat on high. Add kielbasa and cook until lightly browned. Add 1 tablespoon canola (olive) oil and heat on high until just smoking. Add onion and red pepper. Cook for 3-4 minutes stirring a couple of times. Add cabbage and cook additional 3-4 minutes stirring several times. Add garlic and cook 1 additional minute. Adjust heat down a bit if needed. Crumble bacon over the top and salt & pepper to taste.

Had family over for Sunday brunch: Egg salad (Eggs and Celery), Tuna salad (Canned tuna with Pickles) , Green salad with Bagels.
Sunday dinner with friends: Filet mignonette, Burgers on Kaiser roll, Salad, Slaw, Baked pasta with broccoli. I indulged it with some Merlot.3 -

Not a meal but I baked my own chocolate brownies with icing and chocolate shavings on top. It was my first time doing it and I think they turned out pretty good!

Monday dinner: Burrito! Cheese, Refried beans, Salsa chicken, lettuce and avocados- We chowed it down. Yum1
