Is this a good spaghetti Napolitan recipe? If not, please send a recommendation.

I have been loving an abomination of spaghetti aglio olio, vietnamese style.

Three salad night tonight: red cabbage Carolina vinegar slaw, carrot raisin pineapple salad (no mayo), mixed veg (tom/cuke/etc.). Served with grilled sirloin, sauteed mushrooms, brown rice. I went a bit overboard tonight, but it was a little family special meal. I plated with "photogenic" in mind, not portion control, but still, MFP estimates this serving is about 1280 cals, 90g protein, 52g fat, 115g carb, high in the macros for one meal, but still within my 2000/day. In any case, I will probably have to ride the bike more aggressively, or longer, or both, tomorrow to burn some of this off ...
Photos:
1. Three salads. Note the carrot salad also has crushed almonds (recipe called for pecans, but due to nut allergies in the family, we don't bring true nuts into the house). I buzzed enough carrots through the Cuisinart to add them to the tom/cuke salad as a "unifying theme."
2. Plated service. Note the color development in the red cabbage slaw in the several hours between making and service.

@mjbnj0001 those salad looks great!!
I didn't have lotta time last night. Dinner was Spinach salad with radish, cucumber, peppers with a Salmon pattie. Made a lemon vinaigrette for the dressing.2 -
Starter of melon, feta and mint drizzled with pomegranate molasses. Main of buccatini with mushroom and spinach sauce and a meatball. Finally got through that batch of tough meatballs from the freezer that needed warming up in a sauce. The Tesco 20% minced steak is a cut we won't be buying again.

Doing a big cook tomorrow night for a dinner party at my place.
Starting with steamed globe artichokes and hollandaise.
Anti pasta of charcuterie and ryvita (one guest is coeliac). I made chicken liver pate and duck prosciutto in advance and I have some Spanish cured tuna (lomo de bonito) in the fridge. I pulled out a pack of lingonberry preserves from the freezer (supplied by family of a Swedish friend) which I will sweeten with mirin to have with the pate. Plan to buy some berries to nibble on with the duck prosciutto. Have toasted almonds for the cured tuna. The classic combination in Spain is thinly sliced cured tuna drizzled in olive oil and sprinkled with toasted almonds.
Main is Italo-American penne alla vodka. The coeliac is bringing his favourite gluten free pasta.
Dessert is my own invention of pina colada sorbet. Have been practicing quenelles which look pretty awful up to now but maybe by tomorrow night I will manage to make something look half way decent. Made coconut macaroons (half sugar, half Splenda) to accompany the sorbet. Will garnish of slivered kaffir lime leaf and toasted shredded coconut.1 -
A veggie stirfry with broccoli, zucchini, bell peppers, garlic, brown rice, olive oil, and soy sauce. Simple and DELISH!3

That green dish is stunning. Me want. 😍2 -
Dinner tonight: Udon with mini sausages and bok choy for kids!

I wouldn't call cookies a meal but...
Banana, coconut, chocolate chip cookies from a gluten free cookbook. A friend's wife (who has celiac) made them a few weeks ago and I asked for the recipe because they were really really good. They're also only 50 calories a cookie (the recipe makes 35 though so...).4 -
Not really a meal, but dessert leftovers from last night. Pina colada sorbet and an almond macaroon.

Huge zucchini from a friend turned into : zucchini muffins and creamy zucchini soup!6 -
I made sticky soy and ginger glazed chicken today! Marinated chicken thighs in soy sauce, brown sugar, sesame oil, fresh ginger and garlic and red pepper flakes, then pan-fried them, rested them, and sliced them up. THEN boiled and reduced the rest of the marinade til it became glazey, poured over the chicken, then topped with green onions and sesame seeds. (Some sautéed red onions with more ginger and garlic in there too).8 -
Pan fried sole. Chips, asparagus and mushrooms cooked in the air fryer.

Tacos - Trader Joe's carne asada (essentially marinated skirt steak - surprisingly good), corn from farmers market, cherry tomatoes, onions, and partially homemade tortillas. I was going to make the masa myself, but ended up getting locally made masa at the store.3

Yesterday I made:
Banana oatmeal chocolate chip bars for the kids.
Tater tot sausage egg and cheese "muffins" for the wife to take for breakfast
My egg white ham and pepper jack bites
Tatziki pasta salad (whole grain penne, cucumber, tomato, kalamatas, dill, garlic, lemon juice, greek yoghurt"
Greek marinated chicken ( garlic, lemon juice, greek yoghurt, oregano)
Today I'm making pulled pork and black beans in the crockpot to portion out and freeze for lunches.3 -
I spent yesterday cooking to get ahead for the week. Last night we ate navy bean with bacon and spinach soup, and there are leftovers portioned out for lunches. I also made Blissful Butternut Squash Soup, but only for my husband and I to take for lunches because the kids don't like it. And I made turkey pumpkin white bean chili for later this week. All recipes from Skinnytaste.2

good job @duskyjewel ! Meal prepping really helps.
I spent a long time in the kitchen yesterday as well. The zucchini bread and zucchini soup from that ginormous zucchini. Then hard boiled eggs for the week (snack), steamed chicken breast that I shred and for salad toppings and sandwiches. I also had the slower cooker going with Beef chuck and Mushrooms for dinner that we had with Green beans and Rice.
Cut up some watermelons, made snackpac for kids (1/2 apple, cheese, carrots and cucumber with ranch, yogurt drink and some crackers) my fridge is packed! But knowing everything will be eaten is a good feeling2 -
