More about veggies. Upon further reflection, I realize that I routinely eat many more veggies beyond the ones I already mentioned (tomatoes, frozen mixed veggies). I make chicken or turkey soup with carrots, celery. and onion (I'd add parsnips but Jake doesn't like them and says that they spoil the soup). I scramble eggs with a frozen mixture of onion, red, yellow, and green peppers. Sometimes we have frozen broccoli or cauliflower. I am growing zucchini and when it's ready in August, I'll eat it every day. I have yellow squash on my grocery order for next week.
There were fireworks nearby last night and Bessie moved from her bed near the window to the corner on the floor next to my side of the bed. They weren't loud but it doesn't take much to scare her. I expect that it will be worse tonight.

Happy 4th to those that celebrate! Last night I saw more lightening bugs than I ever have in my life! I don’t recall our woods this way last year so am curious how it came to be they chose here.

Vegetables ... again ...
I usually kept a collection of 3 kinds of vegetable 'types' based on purpose with many of them being interchangeable. Salad/raw eats, cooking standards, frozen. They were all purchased at a grocery store or a 'farm' stand. This year I am trying something different ... I signed up for a time share at an organic vegetable farm as birthday gift for myself and have picked up 2 weekly bags so far. My intent was to try eating mainly vegetables that are freshly grown locally and in season. So far, none of the vegetables available are my cooking standards so I need to still get them at the grocer if I plan to use them otherwise I will just eat those farm vegetables. As I cook for one, that small share bag of produce is plenty for the week. This week I got: green onion, beet, Chinese Cabbage, Sugar snap peas, and 2 kinds of lettuce. Last week was a challenge to use up unfamiliar greens. I expect greens will be a big part of the bag until the sturdier summer produce comes into it's own, thus I expect a changing profile in the vegetable based dishes I will get to play around with this year. ... Then it will be back to my standards for the non-growing season.

Hello all! Happy fourth! Tim and I don't really do much for this holiday, now that the kids are grown and off doing their own thing. I (sometimes we), don't even go to see the fireworks when the fourth falls on a weekday. Too hard to manage bc the fireworks don't start until about 10:15pm, they last a good half hour or 45 minutes, and getting out of town and home takes about 45 minutes to an hour (usually only a 10 minute drive). Add to that the fact that that much activity and stimulation before bed will keep me up another hour or two...there is no possible way for me to do this and wake up the next morning and be kind to small children. Tim LOVES fireworks, and will always go see them if his pain is under control. Anyway, I will do a bit in the yard, a bit in the house, and then some meal prep for the week. I have burgers ready for dinner tonight. That is our "celebration" in a nutshell.
LOL...just got a text from my brother. His daughter is visiting this weekend, leaves tomorrow, but they want to get together. SO...burgers, brats, and all of the trimmings for eight. Operation Top Speed underway. lol ttfn xoxoxo KJ5 -
M lettuce likes it cool so it make sense some shade works for it. Peas are the same. Again this year not getting many peas because we had patches of 90 degree days. Strawberries did great. Almost done.
If you plant brocoli you can use the leaves in your salad too. Has the vitamins but easier to eat raw than the florets. Tastes like brocoli. The stems of brocoli are good for you too. We just cook them a bit longer and peel off the outer layer so easier to eat. I plant beet seeds in my lettuce bowl not to get beets but to use the leaves in a salad too. Taste simliar to swiss chard. Has the red line going through the leaf.. I also take the tops of my organic carrots and plant in my lettuce bowl too. the leaves look a bit like dill. I trim this and eat in my salad too. The leaves do have a mild carrot taste.
The only veggies I ever met I do not like are eggplant and black eyed peas. Texture in the first case taste in the second. I like Okra in soups or in batter and fried (although that defeats the purpose of eating a veggie) My mom used to put Okra in her soup. Good memory.
Heather I have a friend that got COVID right after her cruise to Alaska. Fortunately they were already off the ship when they (her friend got it too) when they tested positivve.

OMG! It's POURING here! I mean POURING... with thunder. We've had rain before. Sprinkles, even downpours in the middle of the day, but nothing that's washed out the entire day! But IDK if we're going to be able to have our parade!!! Seriously, our neighborhood has been doing this for over 20 years. The first one was just a fluke; a silly thing with one neighbor, pulling his boat behind his lawn mower with his wife and kids in the boat, waving like they were the queen and princesses!!! It's GROWN! We've had fire trucks, squad cars and ambulances (all thanks to various neighbors who work for the city). We have neighbors who have vintage cars. Loads of neighbors PLAN their lawn mower "floats" for months. This is the first year that one of "those first kids" is going to host the parade. They just moved back into the neighborhood. I swear, people will be out there, in the rain to pull this off, but it's not going to be the same, bright sunshiney 4th! WTHeck?!?

Glorious morning after a damp, grey week. Grateful for the moisture to keep the wildfires at bay, but oh how my spirit lifts to see blue skies.
Happy Independence Day to those of us in the US! So far only minimal fireworks noise, hooray.
We’ll picnic on hot dogs, store bought beans, left over salad and watermelon, when I get back from watering D’s plants. Then dogs to powerline, play in the dirt, whatever feels right. One thing, I will NOT sit in front of the TV with a carton of frozen yoghurt and a spoon, again tonight.

Kylia we won’t be seeing any fireworks unless the booms wake me up and I can see any from my office or our front porch. Unlikely due the marine layer. A few years ago I took a jet boat trip to watch from the bay where the Rogue River meets the sea. Stunning display but dang it was ccc old on the water, even with blankets, jackets, hats, gloves and wind breakers. Now I’m reluctant to drive that late at night or be sardined in a boat with that many people. Well done on the small instead of large flurry for your DH. Joe will eat however many baked goods I set out, so I’ve learned to limit what I set out instead of the whole batch.

Niki my chiropractor grills her greens, romaine, radicchio, etc, and sometimes adds mustards and arugula to soups and casseroles. Not me, I prefer ‘em raw in salad.

Veggie likes, dislikes and prep: :noway: fresh raw tomatoes (oops that’s really a fruit), eggplant, radicchio, okra and squash in any form.
Yum: Artichokes, arugula, asparagus (grilled), avocado (oops ‘nother fruit), beets, beets (roasted and dressed with vinaigrette), broccoli (raw), brussels sprouts (best is roasted with balsamic vinegar and a little bacon), raw cabbage, carrots, cauliflower (raw or roasted with garlic, parmesan and lemon juice), celery, cucumbers (Persian are best), all lettuces, mushrooms (not really a veg either), mustard greens (mostly in salad), onions, parsnips, radishes, scallions, raw spinach, snow and snap peas (raw or stir fried), orange ( NOT green) sweet bell peppers, sweet potatoes, tomato sauce and God help me corn and russet potatoes in all forms. Can you tell I’m working on variety? No way I can get 30 different in a week, but maybe (with a little spicy V8) in 30 days…

Happy Fourth for those who celebrate. No fireworks here. They stopped them after a major catastrophe where 3 firefighters died in a fireworks explosion a few years ago.
Veggies, I love them all but allergic to eggplant and garlic— eat them anyway but in small batches. BBQ or sautéed. DH taught me to sauté them which made me love all greens that way - sautéed in butter with a little pepperoni and seasoning per taste. Yummy but favorite greens are beet greens. Tender and sweet, not bitter.

Margaret ... what are you referring to when you say "plant in your lettuce bowl?"
Vegetables ... as a kid I hated them. Now I love most everything except peas and that's really just dependent on preparation and age of the peas. I discovered that carrot tops are really good! Especially if made into a pesto and top roasted carrots. Not sure about okra. It wasn't used in any of my family's recipes. I'm not a fan of frozen or canned vegetables ... really like things in season. Niki ... I would enjoy getting a farmer share. Was a member of misfit produce for a while, but then they started sending poor quality, so I quit.

4th of July Plans. ... no special plans tonight except a trip to Dairy Queen after dinner. My husband ... all of us actually ... have really knuckled down on eating healthy since my husband's diabetes diagnosis ... but today is my birthday. Since I wouldn't let them bring anything into the house, we decided that a special treat for today would be ok. I'm really glad to see my husband get serious about his health. We'll meet with the nutritionist on Wednesday and I have a lot of questions for her. I understand just about every diet on the planet, but want to make certain we're understanding carbohydrates/sugars/net carbs correctly. She is going to need to talk to him about portions.
Fireworks ... the neighbors have been setting them off all weekend so I'm sure they'll do more this evening. There have been professional displays available to attend. Our community has it's parade tonight at 8:00 and then fireworks at dusk. We won't attend as I'm no fan of crowded areas.
So sad today about Highland Park, IL. My brother's home is 7 miles from where the shooting took place. He and his family are safe, but they knew people at the parade and in the parade ... who as information is filtering through, are also ok. Another grieving community.

I have no desire to emulate her muscles, especially with my joint troubles, but any exercise is better than no exercise. I just did my Strong Women Stay Young workout this morning and plan to do it three times per week, building back up to acceptable weight level.
New ladies - some of us in this group have been doing the Strong Women Stay Young (SWSY) program - thank you Barbie for telling us about it a few years ago. The book is by Miriam E. Nelson, Ph.D. from Tufts University, and the program was developed as strength training for older women. I recommend reading the book once or twice before diving in.

I did the SWSY for several years until I was stalled with some injuries and a surgery, and other life complications not related to the workouts. I didn't develop into Joan McDonald, lol, but had good energy and just felt better overall than I had in a while. Workout "high", lol.
I'm not a "go to the gym" person because I don't like being around another person's sweat, never have, and I don't like to wait around to get access to a machine.

Happy 4th all. I have been reading but not commenting much.
Regarding fireworks-I won’t go anywhere to see them tonight-don’t like crowds or staying up that late! Probably the most impressive fireworks I have ever seen in person was at Niagra falls on the Canadian side. Of course, it was the Canada Day display and it was magnificent! Spoiled me.
Heather-glad you made it home safely. Hope your Covid cases remain mild. I have thus far avoided it but am sure it will catch up at some point.
Mattresses and hips-not to sound alarms, but I found when my hips were bad (on their way to replacement) laying in bed was torture. After replacement, use the same mattress-no issues. Something to consider if mattress change doesn’t help.
Julie (bananasandoranges) was last active around June 11. It sounded like she was fairly busy then so perhaps that is all it is.
Lisa-your family story was most interesting. Glad you were able to step in and be a mother to the kids. Genetics do not a parent make.
Vegetables-I like them all for the most part. Prefer okra cooked in soup and not solo, same with peas (but I like fresh peas in salads).
Avoiding salt-I also watch my salt intake. I like using Mrs. Dash as seasoning on any number of things-and there are several different seasoning.
Latest house project:So my bathroom toilet tank was leaking (the rubber washers on the inside of tank were disintegrating). Was going to call plumber and just replace toilet, but the rest of it seems fine even though it is extremely old (not used a lot). I bought one of the total tank kits at Lowes and decided I would try that before the complete redo ($24 isn’t bad and I have wasted more than that on dumber stuff). Got tank off, got basic parts in, went to put it back and turns out I really did need a second person to help with the tightening of the bolts holding tank to bowl. Got ahold of one of John’s (and my) friends and asked if he could stop by. He did today. Told me he had never been able to get the tank part replacements to work well. Well, I told him what we needed to do, he followed the steps, and I have a toilet that flushes and no leaks so far! He said “I guess that’s what happens when you follow the directions! It’s the little things.
Took some stuff over to son’s new house. It is a cute little place. Met DIL there today and went to Lowes and arranged for two doors for them. After they do measurements and order, Lowes will call me to ok charges to my card-it’s their housewarming present.
Well, think I will go get lunch packed and kitchen cleaned up. Going to work tomorrow.
