    Sounds like alot of fun to me! LOL!

    I just dont trust myself around the holidays to 'be free'.... my french canadian family heritage is full of fat, full of carbs, full of sweets, and TONS AND TONS of wine! LOL!!!!

    Im definitely looking forward to cooking though - I do it for a living as it is, and cant wait to experiment on some ideas I have...

    I'm in the UK so we don't have a thanksgiving. I do have a free Christmas though, and get straight back on the regime in the New years.

    I do try to keep my excesses confined to Dec 23-28 though! Christmas for us is all about turkey & trimmings, chocolates, cheese boards, mulled wine... mulled cider, mulled amaretto punch.... lol, you get the picture!!

    Hello! Just found this thread. X3 I'm on a keto diet - I keep my carbs under 20g/day. I have a keto mexi-bake recipe that I thought I'd share:
    1lb ground beef
    3c shredded cheese
    2tbsp chili powder (adjust to taste, I put in far less)
    8oz can tomato sauce (lowest carb you can find)
    Black olives (optional)
    Sour cream (optional)
    Hot sauce (optional)

    Preheat oven to 350F
    Mix the ground beef with the chili powder, then brown it on the stove
    Drain and spread it out in a casserole dish
    Top with the sauce
    Top with cheese
    Put in the oven for ~10 minutes or until cheese is nice and melty

    Serve with olives, sour cream, and/or hot sauce.


    As for Thanksgiving, my mom is making a turkey and we're having dinner at her house - I'll bring fauxtatoes and help make a low carb gravy with xanthan gum, and maybe bring some oopsie rolls. The only thing I'll be really sad about missing out on is the yams covered in brown sugar and butter! And maybe the pumpkin pie, but I found a low-carb pumpkin cheesecake recipe that might substitute okay.

    I'm going to try that coconut curry chicken! Yum! I made the heroin wings last week and they were awesome! I plan out my Thanksgiving dinner and all holiday meals in advance. I have to stay on plan, but I do make a lot of sugar free and low carb desserts...and I usually splurge on a few Christmas cookies. I'm working this Thanksgiving so I'll be having lots and lots of turkey at work! Nice, high protein filling sleepy meal! lol

    Melt 2 tablespoons of butter (not too hot)
    Drizzle over 2 oz of Plain Pork Rinds
    Sprinkle with 2 tsps cinnamon and 2 splenda packs.

    I'm guessing you would have to use a low carb sugar free honey- after doing a quick search google came up with this bad boy on Amazon: http://www.amazon.com/Natures-Hollow-Honey-Substitute-10/dp/B000TQBEFK

    Maybe a sugar free vanilla syrup might work?

    Tonight I am making low carb mexican nibbles for me and my friends. we take it in turns to cook for one another and I wanted to make something delicious without them nessesarily noticing it's low carb:

    -Avocado halves stuffed with pico de gallo (Made with finely diced tomatoes, spring/green onions, coriander/cilantro, red chilli pepper, lime juice, evoo)

    - Parmesan 'crisps/chips' made by bakind grated cheese in rounds on a non stick baking sheet.

    - white fish ceviche (Firm white fish cured in lemon & lime juice- tossed in onions & coriander/cilantro)

    - Spiced shredded chicken with mole flavours (slow cooked with a blend of cumin, garlic, cayenne pepper, a pinch of cinnamon and a pinch of cocoa)

    - Jalapeno's stuffed with cream cheese.

    I'll let you know how it goes!!

    Oh yeah. You should do that for us! :wink: I would but my computer's got a virus and I can't get on fb at work. MFP has become my fb!

    I think having one central place for recipes, photos that dont require photobucket.com (what a pain in the *kitten* that is for me when photobucket doesnt want to load)...

    I love it here with our group - to be honest, you guys and gals are the only ones (besides the select few in my friends' list) who actually welcomed me here and dont throw crap on me when I post things...

    If you all would like this - I will be MORE than happy to build one for us!!!!



    We can still keep the "Low Carber Daily Forum" as the name of our group - keep it consistent...

    Let me know.... Ill sign on a little bit later - I have lots of food to prep for grilling tonight....

    I adapted a linguini recipe I am addicted to by cutting courgettes (zucchini) into thin strips to replace the linguni.

    Prawns
    finely chopped birdseye chillis to taste (I like spicy so use about 4 chillis without the seeds for 2 people)
    lemon juice and zest (1 lemon for 2 people)
    crushed garlic (again, to taste, I use 3 or 4 cloves for 2 people, I'm weird but I kinda like garlic breath)
    butter (1 or 2 tbsp)
    flat leafed parsely, chopped
    courgette cut into thin strips like linguini (easy of you have a mandolin, a bit time consuming without!)

    Preparation:
    Slice the courgette and put to one side
    Chop the chilli and parsley finely
    Crush the garlic
    Zest and juice the lemon

    Heat half the butter in a pan
    Add the garlic and chilli
    Meanwhile, heat the other half of the butter and a little of the lemon juice in a large pan or wok and add the courgette strips.
    **Be careful, the courgettes won't take long to cook, you want a bit of bite.
    When the garlic starts to brown, add the remaining lemon juice and zest, then the prawns
    When the prawns are cooked add the chopped parsely
    Serve the prawn mixture on a bed of courgette strips

    Lovely with a glass of cold rose if you have enough calories left for a treat!

    I love this! I have tons of recipes and I always take pictures and post on facebook so I already have a bunch I can use (love food porn!) LOL
