    I adapted a linguini recipe I am addicted to by cutting courgettes (zucchini) into thin strips to replace the linguni.

    Prawns
    finely chopped birdseye chillis to taste (I like spicy so use about 4 chillis without the seeds for 2 people)
    lemon juice and zest (1 lemon for 2 people)
    crushed garlic (again, to taste, I use 3 or 4 cloves for 2 people, I'm weird but I kinda like garlic breath)
    butter (1 or 2 tbsp)
    flat leafed parsely, chopped
    courgette cut into thin strips like linguini (easy of you have a mandolin, a bit time consuming without!)

    Preparation:
    Slice the courgette and put to one side
    Chop the chilli and parsley finely
    Crush the garlic
    Zest and juice the lemon

    Heat half the butter in a pan
    Add the garlic and chilli
    Meanwhile, heat the other half of the butter and a little of the lemon juice in a large pan or wok and add the courgette strips.
    **Be careful, the courgettes won't take long to cook, you want a bit of bite.
    When the garlic starts to brown, add the remaining lemon juice and zest, then the prawns
    When the prawns are cooked add the chopped parsely
    Serve the prawn mixture on a bed of courgette strips

    Lovely with a glass of cold rose if you have enough calories left for a treat!

    I don't think so at all...but it's the weekend and some people don't check out the boards on the weekend...some don't even check in. I don't know how they do it since I'm more addicted to this site than fb!! lol

    Well - how about a poll?? Who would be interested in having a Facebook page - JUST FOR US LOW-CARBERS???

    I think having one central place for recipes, photos that dont require photobucket.com (what a pain in the *kitten* that is for me when photobucket doesnt want to load)...

    I love it here with our group - to be honest, you guys and gals are the only ones (besides the select few in my friends' list) who actually welcomed me here and dont throw crap on me when I post things...

    If you all would like this - I will be MORE than happy to build one for us!!!!



    We can still keep the "Low Carber Daily Forum" as the name of our group - keep it consistent...

    Let me know.... Ill sign on a little bit later - I have lots of food to prep for grilling tonight....

    I love this! I have tons of recipes and I always take pictures and post on facebook so I already have a bunch I can use (love food porn!) LOL

    I'm in for the facebook idea- although I would like this one to keep going too. Like I said before, I like the anonymity MFP gives and im not too comforatble dicussing my weight on FB but recipes, food porn etc is a great idea!

    I completely agree! There is no way I would discuss my weight and issues on FB, but I do like hints, tips, recipes and of course the food porn! :tongue:

    im a low carber...i dont follow a specific diet or plan, i just dont eat a lot of carb rich foods...

    cant wait to try some of these recipes...

    Veal Saltibocca- one of my fave italian dishes. Its really simple to make and is about 4g carbs (when you omit the flour). If you dont like or cant find veal escalopes then pork or turkey will substitute fine.

    I am in! I have a cookbook that has fabulouos low-carb recipes so will try to post often. Great idea to set up this forum for those of us who prefer to eat low-carb.

    Here is my first recipe post -- hope you all enjoy! (From Better Home and Garden's Biggest Book of Low-Carb Recipes Pg. 65)

    Baked Spinach-Ham Frittata (this makes a great weekend brunch)

    8 eggs
    1/3 cup milk
    1/4 tsp dried basil, crushed
    1/8 tsp black pepper
    1/4 cup chopped onion
    1 Tbsp butter
    1 10-ounch package of frozen chopped spinach, thawed and WELL DRAINED (I recommend patting it dry with paper towels)
    4 ounches thinly sliced cooked ham, chopped
    2 Tbsp grated parmesan cheese (fresh is best)


    1. In a medium bowl beat together eggs, milk, basil and pepper, set aside.
    2. In a 10-inch ovenproof skillet cook onion in hot butter until tender. Remove from heat. Stir in spinach and ham, pour egg mixture over spinach mixture. Bake, uncovered, in a 350 degree oven for 15 to 18 minutes (until knife inserted in center comes out clean).
    3. Sprinkle parmersan cheese, Cover and let stand for five minutes before serving.

    Nutrition Facts per serving (four servings)

    270 calories
    18 g total fat (7 g sat. fat)
    658 mg sodium
    6 g carb
    2 g fiber
    21 g protein.

    It is delish and you can get creative with ingredients -- I use turkey sausage sometimes. I am going to try your cactus salad this week. Fortunately, I live in Texas so it is in plentiful supply.

    Keep in mind, we can create the same strict settings on Facebook so others wont see certain information.... You can even set it to 'just me' for yourself as well..

    I asked for low carb/diabetic. Got mashed potatoes and white bread roll. Refused to eat it, got told off. Then given pasta in what appeared to be glue! ~Refused to eat it. Asked for salad. Got dead leaves and gloop.
    REALLY??? Is this how we feed our sick?
    I am so pleased to be home!!!
