@amandaeve We have a lot of similar tastes in food, apparently. Never thought to mix eggs and tempeh. I guess you dip some of the tempeh in the soft yolk?! I'm intrigued at the yummy potential!! Also, I'm now going to make a spring roll for lunch. Thx for the inspo!

The plan was to mix the tempeh in with the stir-fry, but this was a very bitter variety so I ended up steaming it separately. And, yes, dip it in the yolk I did!

I finally tried this for today's breakfast. A warmed over and slightly crispy "quinoa and sesame" tempeh with soft boiled eggs. Oh my my my! Thank you for the inspo!

@amandaeve The southwestern stir fry looks particularly good to me! Do you have a recipe for your garbanzo balls that you'd be willing to share?

Sure! I used this recipe, but changed the spices and didn't make the sauce. I'm trying to get my bf on board with more vegetarian options, but he doesn't care for spicy food. For the record, he said he didn't like the meal, but he did eat it. I'll probably try it again with a different sauce. The texture of the balls was...unexpected, but I enjoyed them.
