Easy weeknight meal. Meatloaf pulled out of the freezer from a batch cook last month and warmed up in the air fryer. My quick and easy method for mash (unpeeled microwaved potatoes, cut in two then pushed through a ricer before stirring in salt, butter and milk), store bought sauerkraut. Gravy left from when the hubby last made a batch of meatballs.

Oven-roasted chicken thigh with butter & onion, plus microwave-steamed broccoli.

Beef/pork meatballs with spinach sautéed in olive oil & garlic. The sauce was thin because I don't use binder and didn't feel like reducing it, but the flavor was fantastic.

Lamb & beef Balti with kachumber salad. I added chia seeds because I needed a bit more fiber to meet today's goal. This was delicious and will definitely go into my regular rotation.
I used this Balti recipe but I omitted the rice, and reduced the amount of onion, tomato paste, and Worcestershire sauce to lower the carbs & sodium. Kachumber salad is a straightforward affair, but again I used less red onion than the recipe calls for. (I don't like to eat large amounts of raw onion.)

Greek yogurt, apricots, blueberries, sliced almonds, and a drizzle of local honey
4 bean salad with spinach sautéed, tomatoes with balsamic reduction, and breaded cod. A bigger lunch in hopes to limit my popcorn consumption at the theatre this afternoon 🤞

Had dinner at an Izakaya place.

Didn't need much dinner after having Chinese lunch with the girls. Shepherds pie made out of leftover meatloaf and mash with some sauteed spinach and sauerkraut.

Chicken & veggie soup. Celery, carrots, tomato, green beans, zucchini, onion, Brussels sprouts. Topped with roasted flax seed & a drizzle of olive oil. I have several batches of this in the freezer now to pull out when there isn't as much time to cook.

Quick weeknight meal. Fake air fried KFC made with the Chicago Tribune spice mix we make in big batches for the pantry. Air fried potatoes, that the hubby peeled and cut while I was on my way home from work. Leftover slaw and lentils from yesterday.

Didn’t feel like cooking but my protein for the day was way low so I had some tuna w some veggies on the side. Not pretty but it works!5 -

Summer squash sauté: yellow squash & zucchini with olive oil, almonds, grana padano, and salt & pepper. Served with a small filet mignon. This really hit the spot today.

Air fryer roast chicken thighs and root veg (daikon, celeriac and a little new potato) with a side of stir fried blanched sugar snaps with frozen peas.

You don't get a picture, but you can form one in your mind.
My neighbor gave me some light green zucchini. She told me to harvest some tomatoes while I was taking care of her garden while she is on a week-long bike ride. It's generally too hot to cook right now, but I haven't had zucchini and tomatoes in a while. I sauteed some up with onion, garlic, Mediterranean oregano, dried chipotle, and some other secret ingredients. Very tasty.5 -

Roasted mushrooms, okra and broccoli. I wilted the spinach in lemon, butter and garlic. Spicy kimchi, rice, and fried tofu. I was very hungry today lol.

So I came across this tantalizing "recipe" in a magazine article almost 20 years ago and I've been wanting to try this ever since. The way these things go, the snippet I had torn out of the page would only ever resurface when it wasn't currently tomato & watermelon season
... until now. Well, I'm not sorry I tried it, but the reality did not live up to my fantasies It wasn't bad or anything, but the whole was not greater than the sum of its parts, which is a shame when you have delicious summer produce from the farmer's market. The best I can say for this combo is that it was refreshing. I wouldn't call it bizarre or revelatory.

The peaches I bought were not soft and juicy but caramelized in butter and brown sugar, it no longer mattered 🫣
With pancakes, one piece of bacon and my new favourite…whipped yogurt
