Tonights little delicasy here is a Thai style warm prawn salad, grilled green mango, grilled prawns with chilli flakes (I think you guys call them shrimp :0) Red onion, fish sauce dressing on a bed of Cos lettuce, topped with a small handfull of crushed peanuts. So Damn hungry wish I had it now!!! :laugh: :laugh:0 -

Feel free! Though I ended up cheatin a bit.. The prawns left a bit of themselfs on the skillet so I deglased with a little sherry vinegar and then put on a pre-made :noway: thai salad dressing which thickened up just lovely :laugh:0 -

never thought of deglazing with sherry vinegar. I have a small container of white wine that I keep in the frig for cooking, I think that would do nicely. I also think I would use some vermicelli like in a Thai Pho Bun bowl. Thai is one of my favorites but I have not had it since I got super sick after eating some last month. I think it is time to get back on that horse.0 -

You cant go wrong when you make it at home! I like the idea of vermicelli I might try that next time and maybe use some baby spinach just warmed through.... I love Thai and Vietnamese it's just such clean lovely food...0 -

Here's tonight's "Food Porn"... anyone want to guess what it is??? It was amazing, just so you know....
K - finally found my original post w/picture - here's the recipe!
2 yellow squash - sliced into 1/2 inch "rounds"
Baking Pyrex: drizzle light virgin olive oil and spread with a napkin, then coat Pyrex lightly with garlic salt
Topping:
2 Cups of whole roasted salted cashews
2 Cups of purified water
Blend in blender until it looks like "milk"... then add:
1/3C dried onions
1/3C Italian seasoning
2Tbsp Tumeric (<-- anti-Alzheimer's, folks)
1 5.5oz can of V8
2Tbsp garlic powder
1tsp rosemary (fresh from my rosemary plant!)
Blend in blender....
Put on top of squash.... bake for 20 min at 400 degrees....
HEALTHY!!! And, you will have enough "topping" left over to freeze. Two tablespoons of the topping is 115 cal, 8.6 carbs & 5 grams of protein. I've also used the topping on eggplant and it was amazing!0 -
