Protein pancakes under 200 calories
Only 120 calories for huuuugeeeee veggie salad
350 calories for two big hot dogs with buns, not bad

This was a panini/ sandwich with mozzarella, pesto, mushroom, and tomato.7 -
Vitamix or really good blender
10-15 calories total
Mocha Ice 'Cream or Fruity Ice 'Cream:
1 tbsp. dark cocoa powder (or use a powdered flavored drink mix for Fruity version)
1/4 tsp. Xanthum gum
1/4 tsp. Guar gum
1/4 C. Dark cold coffee (omit for the fruity flavored one and use water or juice)
Stevia or sweetner of choice
Vanilla, etc.,
Ice cubes
Blender:
put cocoa, stevia, etc., cold coffee and first handful of ice cubes.
Blend well
Keep adding a few ice cubes at a time until amount desired
Add Xanthum and Guar gum when blended - blend 'like crazy' for smooth results
Use straight away as a 'cream' ontop of things

I like to 'set' mine in freezer to get a more 'ice cream' version (1+ hours)2 -
Homemade tapas spread because having an old friend over counts as a special occasion. Air fryer patatas bravas. Other roast veg (cherry tomato, courgette, asparagus) also done in the air fryer. Portuguese carrots and Catalan spinach and cold cuts we dragged home from recent vacation in Lombardy (prosciutto, venison salami, turkey braesola).

First time posting here after being inspired by all your lovely dishes! My partner is quite a fussy eater but he cooked and tried 4 new things today.
Here's oven baked chicken with a cornflake spicy coating, small salad of watercress and grated carrot, samphire, asparagus, and mashed avocado. I've never tried the samphire or asparagus before but it was delicious!

Ah, summer! Due to life/scheduling, we're a little late getting the grill going this year. Tonight is burger night to kick off the season. Foil items are potato-veg packets; salads are in the house for side dishes.

Kale Turnip Gratin. Recipe from Bon Appetite. I won't use a recipe from them again. Never have I tried a recipe that required so much cookery, took so long for no reason, and had a website so poorly designed. I cheated a lot, turning the millions of steps into 3, but the site kept re-loading, allowing me to see only ads for minutes at a time. Arg!
Another online recipe failure. Quinoa stuffed eggplant. It looks beautiful, and the tahini was tasty. But, it wasn't enough to be filling and tasted gross.

First meal of the day at 730 pm due to being busy, was so hungry, simple meal of baked maple pork chop and steamed broccoli7 -

Summertime grilling. Southwestern-style grilled chicken, foil-packet salsa corn, foil-packet potatoes/peppers/onions, tomato-cuke salad.

Dinner got a little overcooked. Roast beef and hasselback potatoes done in the air fryer. Green beans sautéed in a little butter and plain cherry tomatoes. Yoghurt and horseradish sauce, port gravy.

I'm on a huge acai/smoothie bowl kick. They're all I want to eat now.
