You're making this way more complicated than it ever needs to be. You got a scale. Good. That's step one.
Next step is to eat the number of calories my fitness pal tells you to and weigh and log EVERYTHING before you eat it. No guessing. Stop eating when you've reached your daily calorie goal.
Sorry to be blunt but you didnt become overweight by "not being a big eater" or "struggling to reach 1200 calories."
You can eat anything you want. Yes, ANYTHING.
That's literally it.

kpaing121, If you are having difficulties with loosing on a 1200 cal diet, maybe look at the types of foods eaten. Rice and nut bars to some people can be a weight gainer...I can not eat rice and nut bars tend to have a high amount of sugar. Are you able to try fresh/cooked veggies-different varieties? Have you tried Kefer? or other fermented foods? Just suggestions.32

Oddly enough, this is the kind of false advice kpaing would have latched onto had they not deleted their account. However, @Panini911 is correct; they were definitely eating too many calories.14 -
I havent read the whole of this thread yet but you do need to be really careful about the entries. I think a lot of people dont understand 'serving size' and 'per 100g' and then muddle up the calories and other nutrients. So many entries are not accurate. I was correcting things but there are so many I have sort of given up and just use whatever is nearest. I find that someone might put in the correct calories but use the wrong information for fat, sugar etc
Certainly for UK products the sodium is not accurate and you can see where people have tried to calculate the sodium and put something way off or thought you just add 0000 to it to make it like sodium. Lucky for me I dont track it. I have been interested to see just how little sodium I eat.3 -

She is not eating 1200 calories. If she was, she would be losing. 1200 calories a day of any food is not going to cause weight gain. This was not a strong first post for you. Maybe you should spend some more time researching legitimate sources before you start commenting, because your advice is not the least bit helpful.11 -

Agreed. Some people really went above and beyond to help this person even though they knew deep down something was amiss. I've been around this site for a while; ten years overall and actively posting since June 2015. Whenever there is a post here about someone plateauing, I know what the answer most likely is. It's a breath of fresh air when the poster seeking help can admit they aren't too careful about logging and are open to learning tips and tricks.
However, posters like that are a rarity. Instead of admitting fault of any kind, they always swear they weigh and measure everything. Then they get asked "What do you mean weigh AND measure? You should only be measuring liquids." Again, the poster swears they weigh everything and log meticulously. Then the diary becomes public and there are no grams or ounces to be seen, there are missing weekends, various user made and/or fast food entries even though they said they eat "clean" or know they're accurate, etc. Almost every time without fail. Then they get called out on it in a direct way and they get defensive.
I'll admit that I'm blunt but when I'm posed with a problem, my thought process is to offer a non sugar-coated solution. I would never make fun of someone for eating more than they think; it's easy to make that mistake and portion sizes have grown. To get defensive and lie isn't going to help them though. Giving them soft suggestions like getting their thyroid checked in order to spare their feelings isn't going to help them. I gained and lost weight using this website in the past before I truly understood what the numbers meant; I was fresh out of high school, tired of being obese, and just thought 1200 calories was the goal no matter what. I had no clue about CICO and never heard about it in real life. I came back here in June 2015 at the age of 30 wanting to finally change. I have a mathematics degree and once I read that essentially this was all math related and boiled down to CICO, it was a breeze for me. I was using the food scale from day one and losing weight could not have been more simple thanks to the posters of this site.

Last week, I looked at 28 days of her logs and they showed she was averaging 912 calories per days. She said she only lost a pound in this time. That's simply not possible, so the issue was bad logging, likely a combination of not logging everything and using bad entries.9 -

OP has deleted her account, but I think this is probably still worth responding to in order to hopefully clarify some of your statements/beliefs...
Rice and nut bars (or any individual food for that matter) will not cause weight gain if a person is eating in a calorie deficit. If someone has been restricting carbs, and adds these foods back, it's possible they could see some short term water weight gain, but this would only be temporary. Much in the same way that a person experiences a woosh of loss when going on a low carb diet...
Secondly, why do you think Keffir or other fermented foods would help with the OP's issues?10 -
Don’t give up , just go back to the drawing board and figure out your macros , and calorie maintenance and try an eat below that ... you can do this !!! Have fun with it , enjoy the ride . It takes time , consistency is key in my opinion ... be sure you’re also giving your body enough calories to function off of ... minimal calories may actually slower fat loss in my opinion and experience... if June is your target date then it’s time to ramp it up ... maybe increase your cardio to with little bit of weights before ... you got this !! Dont throw in the towel 💙23
