Nowhere near as elaborate as the rest of you - and I wouldn't even try to take a picture with my potato phone - but I made a big batch of orzo pilaf with ground pork and leeks.
Moderately proud though because it hasn't turned into a compact block of solidified starch the way my orzo usually does the next day...4 -
Mondays is always omletes - with herbs, plus tomato and courgette slices this time. And buttered potatoes.1

Last night I made stir fry w/ chicken thighs and misc. veggies that I had on hand. Bell pepper, mushrooms, jalapeno, carrot, snow peas. with white rice.2

Homemade black onion seed pitta stuffed with cumin spiced chicken tenders, green olives, mayonnaise and mixed salad for my daughter, vegetarian ‘meat’ balls, flame grilled baby sweet peppers, harissa yoghurt and mixed salad for me. 😋2

Wholemeal pasta, with brocolli and strips of smoked salmon tossed in - and then yoghurt (plus a little left over tinned salmon also in yoghurt). Lots of black pepper.
Banana slices with yoghurt, flaked almonds and maple syrup.
It was a quick and easy copk tonight. But still tasty.1 -

veggie lasagne - including aubergine, sweet potato, carrot and red kidney beams and with my cheat bechemel sauce - seasoned large pot of yoghurt with an egg mixed in.2

Farro with mushrooms from the NY Times. I used fresh chanterelles and hedgehog mushrooms from one of my favorite vendors at farmers market and didn't add the parm. I love parmesan, but I don't typically like it in risotto or risotto like dishes. That said, some shaved on top would have been nice. This would also probably be good with a gremolata or zhug stirred in right before eating it.1

Coconut soup! ( made it vegetarian for the Party I went last night) Nappa cabbage, Carrots, Mushrooms, Green onions, Lemon grass, Ginger, Thai chili paste- Yum, yum!!2

Vietnamese minced pork with aubergine, tomato lalab, cucumber salad with goma dressing. I make the salad dressings in batches to kept in squeeze bottles in the fridge. If you have these on hand this a dinner that can be put together within the 20 minutes it takes to boil the rice.

Griddled Balsamic Portabello Mushrooms, Brown Rice with a mushroom blue cheese sauce and salad. Super filling for very few calories!1

I'm cooking with a girlfriend tonight at her place. Doing steamed artichokes with hollandaise followed penne alla vodka. Because hollandaise sauce generates leftover egg whites and tomato vodka sauce generates leftover double cream we are going to do pavlova for dessert.2

We had a big late lunch so didn't need much by way of dinner. Salad of canary melon, feta, mint, pomegranate molasses.

Baked fish in breadcrumbs, potato and parsnip mash, and some cauliflower, carrots and peas.
Left over Pineapple slices that I had poached with star anise and muscavado sugar. (With a dollop of icecream).

Yassa chicken (also known as chicken yassa) served with fonio and ruf. I watched a video on Bon Appetit's youtube channel where it's featured. While Bon Appetit didn't publish the recipe, it's easy enough to figure out from the video and it tasted very good. I also made some garlic chili oil without szechuan peppercorns and it's absurdly good. I added some to the chicken after I took the above picture.7 -
