Homemade chinese. Szechuan aubergine with minced pork and a chicken breast and asparagus stir fry with sticky rice. I substituted a third of the minced pork with vegetarian quorn. I am not crazy about quorn on it's own but swapping out a third for any recipe calling for minced meat saves calories and money with no discernable impact on taste or texture. We keep a ziplock bag of quorn mince in the freezer

Rice spaghetti (gluten free) with my late Nonna’s pasta sauce made with ground turkey instead of ground beef this time. Made this as I do every year to honor her birthday9 -
Making dinner was a struggle. Not enough beans in the szechuan green beans with pork mince because I burnt the first batch and didn't have. Di san xian was dependably good though.
