and of course I find all these yummy recipies in the middle of an Australian summer ..... but will most definately be back here come our winter to try some out.... I have been using my crock pot for years (mum had one when we were growing up) but never really thought about how much more I could do with it ...... always used fresh or thawed meat (didn't even think about throwing a frozen chicken breast or diced meat in).

Actually summer is my favorite time to use a crockpot! Saves heating the kitchen up. Unless you eat totally cold food ALL summer long, why not cut the heat in the kitchen and use your crockpot. I save stove and oven recipes for winter and crockpot or grill during the summer months.0 -

Slow Cooker - Taco Chili
1lb 90 % lean ground beef
1/2 onion finely chopped
3 cloves garlic finely chopped
2 cans dark red kidney beans with liquid
2 cans mexicorn with liquid
1 can tomato sauce
1 can chili beans with sauce
1 1/2 packets taco seasoning
1 1/2 cups water
1tbs brown sugar
1tbs butter
brown the meat with the onion, garlic and taco seasoning. Put the meat mixture and everything else in a crock pot. Cook for 6-8 hours.0 -

Slow Cooker Mexican Chicken
Number of Servings: 6
Ingredients:
4 boneless, skinless chicken breasts
1 cup salsa
1 package reduced sodium taco seasoning
1 can reduced fat cream of mushroom soup (condensed)
1/2 cup reduced fat sour cream
Directions:
Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.
Serve with rice.

One whole onion, sliced into rings
One whole chicken, cut up
One to two bulbs garlic, separate cloves (you will have between 20-30 cloves)
Salt and pepper
Paprika
1 TB Olive oil
Layer onion on bottom of crock pot. Rub chicken pieces lightly with olive oil then sprinkle with salt, pepper and paprika. Put cloves of garlic on top (leave some with their skins, some without).
Cook on low for 8+ hours or high 5-6. You will get fall off the bone chicken with a slight sweet taste from the roasted garlic. I serve this the first night with veggies or potatoes. Then take the leftover chicken, skin it and shred it. Now you have chicken for chicken salads, taco salads, enchiladas, tacos, soups, etc. And it's cheap!

Crockpot Buffalo Chicken
4 - 6 individual boneless, skinless chicken breasts
1 jar of Buffalo Wing Sauce (or make your own), divided in half
1/2 pack of dry ranch dressing mix (e.g., Hidden Valley)
2T butter (I don't use this, but some people prefer it)
Mix dry ranch dressing mix and 1/2 jar of buffalo wing sauce
Spray inside of crockpot with Pam or something like that
Put in chicken breasts
Cover with sauce (if you want to use butter, throw it in there too)
Cover and cook on low for 6 hours
When it's done, you can add more sauce to your taste, shred it and put it on buns (thins or other) or do like I do and shred it an put it on top of a salad.0 -

Try the blogsite skinnytaste.com. I just ran across it yesterday, some very yummy looking recipes. Love my crockpot! My kids are in all sorts of after school sports and activities, so to prevent us from eating out I try to plan ahead and have dinner in the trusty crockpot. If I don't have time in the mornings I will run home on my lunch break and throw everything in and get it started then.0

Beef stew -
get some beef chunks cut into smaller chunks (I use 1 lbs of stew cut, then cut them into smaller pieces)
I add 3 carrots, 1 onion, 3 celery stalks, 1 turnip cut like a potato, 1 potato (whatever other veggies you want)
2.5 cups of water
1 enevelope of beef stew mix
1 beef boullion cube
Salt/pepper if you want
Leave all day.
When it is ready, add a can of corn and/or green beans.
Add 1 tablespoon of flour to thicken it. Add the flour and wait 10 minutes and it will thicken.
It comes out to about 100 calories per serving for me but put it in as a meal to calculate it based on what you use.1 -
