I made mini sugar free strawberry pies this weekend.
You can use the standard sugar free strawberry jello and cornstarch filling or store bought sugar-free strawberry filling.
I made some in mini muffin tins for that "just a bite" treat and made others in a small 2x2 square muffin tin pan for a little larger dessert. Both we great and very few cals.
Also made taco cupcakes and french dip cupcakes, Check out Emily bites.com for recipes. So easy and good for taking lunch to work.0 -

I make crab rangoon, and they are so tasty! Adjust quantities to your own taste. This recipe will make enough for an entire package of wonton wrappers.
1 pkg. Philadelphia low fat cream cheese
10 oz crab claw meat or imitation, shredded
2 -3 scallions, green parts only, very finely chopped
Mix ingredients, then spoon into wonton wrappers. Fold on the diagonal, and seal with a bit of water. Spray both sides with non-stick spray, then bake @ 350 until puffy and light golden brown. Serve with sweet & sour sauce. Delicious as an appetizer, or with soup for a meal.

cut them in half, put them on a baking dish sprayed with pam and sprinkle with a little cinnamon and sugar (I use splenda) bake at 400* for 7-8 minutes ....you can have 16 of them for 160 calories. A good snack when you feel the need to crunch. you could try using other seasonings of your own liking also. watch closely they burn easy. good luck!!0

24 Wonton Wrappers
1 Cup of Fat Free Cottage Cheese
1 Package of Sugar Free Cheesecake flavored pudding mix
1/2 Cup Blueberries
Directions: Press 24 wonton wrappers into mini muffin pans and bake at 350 degrees until wrappers are slightly browned. Remove from oven and cool wrappers. Purate cottage cheese in blender or food processor, add package of sugar free pudding mix, and stir together. Once wrappers are cooled, fill cottage cheese/pudding mixture into wrappers and top with fresh berry! SO YUMMY!! Tastes just like cheesecake!
Serves: 6 (4 per serving)
Total Calories: 125 Carb=25g Prot=5.9g Fat=0.31g0 -
