    I’m late to the party but completely onboard! Plan on doing low carb transitioning to keto with IF and exercise 4 x week.

    You and I are similar in our stats! I am going to try low carb this week not so much keto sort of working my way to that.

    @ibamford82 have you tried recipes that incorporate mushrooms, eggplant, and green peppers? I’ve heard these three can really mimic meat in certain recipes. Also Quorn is a HUGE frozen brand for vegetarian and vegan options. I have before and it’s really good!

    Has anyone got any good ideas for nice warm vegetarian meals? I’m trying to cut down on my red meat intake for health reasons and am struggling to find tasty vegetarian meals to feed a family. Your help would be really appreciated xx

    **NB: I'm not feeding children, but I like these.
    I do the roast tray back on this site a lot, its about 3 down: https://www.theguardian.com/lifeandstyle/2016/sep/26/quick-courgette-ratatouille-with-crispy-haricot-beans-recipe-tray-bakes-anna-jones-the-modern-cook
    Its more a template than a recipe. My favourite - sweet potato, butter beans, leek, thyme, smoked paprika, stock+white wine. But work with what you like to eat + have in the house.
    - I've replaced meat with lentils - so bolognaise sauce with lentils. I'd think cottage pie would go down well with children.
    - Aubergine + lentil curry https://www.food.com/recipe/red-lentil-and-aubergine-eggplant-curry-205101
    I also add tomato puree, or maybe passata/tin of tomatoes.

    Never thought of replacing meat with lentils, that opens up the options. We’re very lucky as our children are very good and not fussy at all so will try some of your suggestions this week!
