Steamed artichoke with lemon butter as antipasto. Primo of linguine alla vodka, which is more American than Italian. It was crazy busy at work today so I was logged on until late, but with a little coaching, hubby managed to produce dinner.
Originally scheduled to host two Xmas dinners on the day itself as well as Boxing Day with two different families visiting. Ordered two geese with delivery dates Dec 23, and Dec 24. Then London went into Tier 4 lockdown this week with all social visits banned. Gave away one goose on Dec 23 to the family that were planning on coming on Xmas dinner at our place we didn't have enough room in the fridge\freezer for two geese and they didn't have enough time to order something nice to cook at Xmas. Then on the afternoon of Christmas Eve, got an email that the online butcher would not be delivering my Christmas goose after all due to logistical problems. We had been working all month on emptying the freezer to make room for goose so there was nothing in the house to eat for the weekend. I popped into the supermarket and could find a gammon to cook for Xmas. Then at 17:00 in the afternoon of Xmas eve a goose arrived at the door.
So tonight we ate some gammon and will figure out what to do with the goose tomorrow. Starter of salad with blue cheese, candied nuts and roast pears. Sides of mushy peas, cheese biscuits and apple sauce.
Basmati rice w sauce of black beans, tomato, EVOO, red pepper, black pepper, paprika, chopped onion and garlic, and a laurel leaf. This was really good.

And here I thought I made it up! Ha, ha, but seriously--it tasted fantastic. Anyone who wants to try it, don't hesitate.
Our usual salad, more or less, to start. Green leaves, sliced apple tossed in a few drops of lemon juice, blue cheese and candied nuts dressed in classic vinaigrette sweetened with a little leftover cranberry sauce. Main of linguine carbonara stretched with some spiralized courgette and made with shredded leftover Christmas ham instead of guanciale.
Hubby cooked dutch zuring stampot (=mash with sorrel). Smoked sausage is the traditional accompaniment but the vegan version today were pretty tasteless.
